COLD BUFFET
10 burger toppings
Lge bowls – Lettuce
  • Rocket
Med Bowls – Sliced Tomato
                      - Grated cheddar
                      - Sliced onions
                      - Sliced Cucumber
                      - 3 chefs choice burger toppings
Small bowl - Sliced gherkin
4 x Assorted salads - 1 x beetroot, 1 x potato, 2 x chefs choice.
10 x Accompliments and sauces (small bowls)
  • Garlic mayonnaise
  • 1000 island dressing ( chopped egg, parsley )
  • Chutney
  • Sliced jalapenos
  • Guacamole
  • Olive oil
  • Vinegar
  • Crumbled Feta
  • Mustard
  • Bacon Chopped

LIVE COOKING Red, white, blue, plastic plates for Burgers, chicken burger, and Hot Dogs.
                     – Mini Beef Burger in sesame roll
  • Mini Chicken Burger in sesame seed roll
  • Mini Vienna in Plain Hot dog roll
LIVE COOKING SET UP. Salt / pepper. Oil and brush. Basting sauce and brush. Chopping board. Knife. Cloth soapy water.  Waste paper bin. Grill scrapper. Paper towel.
6 x hot sauces – BBQ, Pepper, Mushroom, Caramelized Onions, Mustard Onions, Cheese sauce.
Chaffing dish with 3 inserts and red white plastic plates. ( to be washed and collected afterwards. )
French fries with finished burgers and hot dogs. (only meat in roll, add toppings from buffet )
SOUP – Chowder  - Fish, or vegetable.
HOT BUFFET
Southern Fried Chicken (Bread crumbed – cooked last minute in afternoon – crispy, NO salsa on top.)
Beef Ribs in sticky BBQ sauce.
Sweetcorn on cob (parsley and butter, tomato onion salsa)
Potatoe wedges (not spiced )
Plain white Rice/ Cajan Rice.
Mac and Cheese (Thin, not thick - cheese sauce )
 
 
DESSERTS
3 x different mini donuts – Cream and icing suger, ring and chocolate, Round cinnamon sugar and jam.
Individual plates x 3 types (each with different sauce and garnish) – Individual Apple Pie, Triangle stand up Choc Brownie, square Pumpkin Pie. NOT SMALL.
Do red white blue piping on some plates.
Ice Cream x 2 types.  6 sauces in square small bowls. Blue white red serviette wrapped cones.
Popcorn red, white, blue, caramelized.
DÉCOR - Diner pics, and red, white, blue cloth on dessert and everywhere.
